I've had a pretty bad time with 1&1 in the uk - don't know if the American
version is different.

Their control panel is very hard to use, and billing is very confusing (they
use contract numbers all the time rather than useful references like domain
names). It's also hard to cancel and move away - you have to log into an
entirely separate site to do so.

I've found Dreamhost to be great - they have a good control panel, give you
a lot of space and allow you to host unlimited domains, databases, email
addresses, etc.

Lots of great extras like shell access, and easy access to rolling database
backups.
