Hello,
Web browsing is done via the Safari web browser and Apple Mail is
just like any Windows mail client. The only feature we currently are
lacking is an accessible spreadsheet program. Text Edit, the Word
Processor program, can handle Word format.

First thing you should do with your Mac is...
Forget everything you ever knew about JAWS. This knowledge (and
trying to
make corrolations with what you already know) will do nothing but
slow you
down and make you feel the Mac is not a productive environment for
you.
The next thing you should do (after you've forgotten everything you
ever
knew about JFW) is go through the Voiceover tutorial and learn about
ten
Voiceover commands. Then you can start to actually get some
productive use
out of your Mac.
Then, wait anxiously for Leopard, because it promises to have even
more
better Voiceover.
