If you are stuck with having to receive SOME html mail, why don't you convert the text into usable text by stripping away the html coding with an AppleScript called "Strip html using Tex-Edit Plus". That way you can at least read the contents easily. There are other ways to deal with your html mail in Emailer depending on what you might like to do with it, but I have found this one the best for those emails that I need to read. If necessary, I can also transfer an attached html file into the message body area with the AppleScript "HTML to body" and then strip out the html. If these are not on Chris' ftp site then email me offlist and I will forward. Unfortunately, there are some circumstance where we Emailer users cannot force the sender to change their ways BUT we must keep receiving these people's emails for some other reason. On another point why not add the university's address in your address book and create a Mail Action to file all these into a University Mail folder and in the Mail Action run an AppleScript, like the one mentioned above on just this mail.
