One of the companies I work for makes hydraulic components, they have a
pc keyboard on the test rig - it gets covered in fluid - their answer is
a ziplock plastic bag and a tie wrap for the cable - they last quite
well <G>.

I use a wireless usb keyboard with a joystick built in - it's a BTC
9116URF - works OK and is small enough to stash out of the way. Doesn't
seem to affect latency.  Most of my stuff is done via touch screen and
pendant so I generally only need the keyboard to type numbers.
