I do so fairly often.

One thing I would like <very> much, and something that would reduce the
number of times I search the entire database, is the ability to select a
subset of folders to search. As things stand one can search a single folder,
or everything. 

I'd like to be able to select a subset either by including or excluding,
e.g., "everything except Deleted Items". Most of my multi-folder searches do
not need to peruse the entire database, just three or four (or five or six)
folders that hold related mail. Given the ability to set up subsets, then I
would define some custom views that would allow me to search certain
pre-defined folder sets. Hm, the way custom views work, though: Can you
specify a different search string on the fly? I guess not. It would be very
useful when combined with sets of folders.
