OK, so no-one answered so I had a flash of insight and noticed that all of
the duplicate categories are created black (i.e. their color is {0,0,0}).

So I wrote an AppleScript to delete any categories that have a pure black
color. Of course this is really dangerous as you might have a category whose
color is black. To counter this I wrote another script that sets all black
categories to {1,1,1} which isn't black but is so close you can't visually
tell the difference. After this is done only categories created by the Palm
conduit will be deleted (as they are really black).

Here are the scripts but beware these could have serious side effects:

To make all existing categories off-black (run once when you are happy with
you category list):

tell application "Microsoft Entourage"
   set theCategories to every category
   repeat with aCategory in theCategories
       set categoryColor to color of aCategory
       if (item 1 of categoryColor is 0) and (item 2 of categoryColor is 0)
                   and (item 3 of categoryColor is 0) then
           set color of aCategory to {1, 1, 1}
       end if
   end repeat
end tell

Then whenever you finish a sync run the following:

tell application "Microsoft Entourage"
   set theCategories to every category
   repeat with aCategory in theCategories
       set categoryColor to color of aCategory
       if (item 1 of categoryColor is 0) and (item 2 of categoryColor is 0)
                   and (item 3 of categoryColor is 0) then
           delete aCategory
       end if
   end repeat
end tell

Of course what would be really cool is if the tasks/notes/addresses created
on the Palm (which would have the black category that gets deleted)
automatically were assigned the correct category. However, I can't seem to
get the following to work:

tell application "Microsoft Entourage"
   set theCategories to every category
   repeat with aCategory in theCategories
       set categoryColor to color of aCategory
       if (item 1 of categoryColor is 0) and (item 2 of categoryColor is 0)
                   and (item 3 of categoryColor is 0) then
           set taskList to  (every task whose category contains aCategory)
       end if
   end repeat
end tell

Without the whose clause working iterating over all the tasks/contacts/notes
would take an enormous amount of time.
