It doesn't disappear into thin air. When you hit the "Delete" key the
message moves to the "Delete"d Items folder. It's really pretty straight
forward. When you come right down to it Entourage is software to manage
email messages (I'm going to ignore the PIM part right now). If you hit
Delete in software that manages messages that means you are deleting a
message. Any functionality that lets you edit the message is just icing.

I think Paul's is a decent enough compromise (though I'd select the "Don't
show me again" option immediately). How are we to get rid of messages if we
can't use the Delete key/button?? You don't even want a warning that the
message will be deleted if you hit the Delete key. Are we supposed to
manually drag messages to the Deleted Items folder?

Attempting to completely idiot-proof software is the El Dorado of software
development... There's always a better idiot. It's impossible to develop
software that encompasses as many features as Entourage does without
confusing a few people. I don't think you're giving your acquaintances
enough credit. I know an 85-year-old woman who's computer experience prior
to her iMac and Outlook Express was occasional word processing on an Apple
Iigs. She manages just fine. She was a little lost at first, but with a
little help and an open mind she managed to figure it out... It's not rocket
science and I'm going to argue it's even intuitive.
