FWIW, this is mentioned on the SR download page in the section titled
"Before You Install"
(http://www.microsoft.com/mac/download/office2001/sr1.asp#before):

"NOTES

If you have renamed any of the files in the Microsoft Office 2001 folder
to anything other than their original names, the update will fail.
Change the file names back to their original names and run the Updater
again. "

I agree that the installer should probably reject updating the app if
any resources are changed. Most users don't 'monkey' with their apps in
ResEdit, and the ones that do should know how to fix it. But the
filename issue merits at least a note in the ReadMe before the install,
I think.
