Entourage has a handy little box in the New Group/Group window that says "Don't show addresses when sending to group."
By checking this box, everyone in that group becomes an individual "to:" recipient, and they don't see all the other addresses on your list. I think this is better than bcc:ing people. Just create a group for your list and check that box.
