You actually don't need to choose the "Edit Message" command before doing
this.  Simply selecting the attachment in the saved message window and
clicking "Remove" will do it.

One easy way to go through old messages and clear attachments selectively is
to create a Custom View like this:
ITEM TYPES Messages
LOCATION This Folder: Sent Items
CRITERIA Match if any criteria are met
Attachment Exists

Save the Custom View, and then open it.  You'll see all messages in your
Sent Items folder with attachments.  You should enable the "Sent" column
(View -> Columns -> Sent), and then sort by that column by clicking the
column header - then you'll see all sent messages with attachments in order
of date sent, ascending or descending depending on the direction of the
triangle next to the column header.  You can then follow Deborah's
instructions to remove attachments from select messages, using the Preview
Pane (View -> Preview Pane) or not.
