And you also need to make sure that in General Preferences/Address Book you have that third checkbox checked: "Automatically match message categories to sender's categories."

Did you create all three rules?  They should be like this, in order:

Rule 1
* Execute actions if any criteria are met
IF Account is Account 1
THEN Set Category New Category 1

Rule 2
* Execute actions if any criteria are met
IF Account is Account 2
THEN Set Category New Category 2

Rule 3
* Execute actions if any criteria are met
IF Account is Account 3
THEN Set Category New Category 3

They should all be under the "Mail (POP)" tab and should all be enabled.  If you're still having trouble, you can find some more troubleshooting tips for rules here:

With a Rule. First, in Edit/Categories/Edit Categories make three new categories with names the same as your 3 accounts or email addresses. Give them whatever colors you want,

If
    Account is <Account 1>

Action

    Set category to <Email 1>


And the same for the other two.
