I envy your HUGE undertaking. Do you think you can achieve it using
the EOS equipment you listed?
Have you read how the famous photograph of 189 world leaders commemorating
the United Nations Millenium Summit was made by Terry Deglau?
The making of the photograph itself made news as a feat of group
portraiture:

Preparation included test shots with 180 live subjects a week in advance.
The shots was taken with Sinar 4x5 large format camera, 100mm lens on tilt
set to f/22, mounted on a 35ft (10m) high scaffold, 100ft (30m) away from
the group. A total of 12 lights throwing 6000 to 9000 Ws illumination,
including 31ft (9.5m) high custom light stands.
