Stainless steel.

Incidentally, metal mounts are not immune to wear. It is not unusual for 
Canon Service Centres to replace the lens or body mounts of equipment 
which has received heavy professional use. After all, what other 
precision mechanical equipment rotates two metal surfaces in opposite 
directions without lubrication?

Plastic lens mounts are actually made of polycarbonate resin with glass 
fibres added for strength and rigidity. This material is less abrasive 
and more elastic than metal.

Metal mounts may offer a better look and feel than plastic, but there is 
no evidence that they are more durable than plastic mounts for the lenses 
on which they are used.
