The 1V may be a better option if you use it _without_ the PB-E2 when you
want to shoot silently, and get the ES-E1 EOS link software as well. The 
reason is that the 1V has a personal function (PF-26, I think?) which does
two things:

1. It delays film advance until the shutter is released, meaning that 
   you can take a shot and then defer the advance by simply keeping the
   shutter depressed.

2. It uses a slower "silent" advance when the camera is in single-shot
   advance mode.

Use of the PB-E2 negates (2), the silent advance sequence. My "quiet"
shooting rig these days is therefore a 1v with a BP-E1 battery pack. It's
not quite as quiet as an Elan or Elan-7, but it's vastly better than my
EOS-3 was (before I sold it).

Even without the personal function, the 1v's noise is less obtrusive than
the 3.
