Conventional wisdom says 'what colour skin do your friend have?' -
Kodak, coming from an American market tends to warm skin tones a
little and give people a healthier, warmer complexion. That is in
comparison to Fuji which pales the skin slightly (very desirable for
those of asian descent, so I am told). The rule of thumb is white
people get Kodak, black/asian people get Fuji.

Not trying to sound racist or anything here, btw.

Particular emulsions. I really like Kodak Portra, if you are going for
ISO 400, get the NC version, which is a bit more flattering for
portraits I find. If you go ISO 800 then you only get one flavour of
Portra to choose from. For Fuji, NPZ (800, now called Pro 800Z) is a
wonderful film, but can benefit from very mild over-exposure (say
1/3-1/2 stop) to bring the contrast up a little and reduce the grain a
bit.

You might like to try a test roll each of a couple of candidate films
if you have time/money/the inclination.

I've only mentioned negative films here because shooting weddings with
slide film sounds like asking for trouble to me, while the films I've
mentioned don't have tonnes of latitude like consumer films, they have
a lot more than Provia or the like.
