Aeroshell published an excellent article on this a few years back.   The 
bottom line is that if the oil temperature does not get up to 180 and stay
there 
for a half hour or so, moisture produced by combustion will accumulate in
the 
oil and eventually form acids that damage the engine.  As you have
discovered, 
the oil filter serves as an oil cooler.  Sounds like you have more cooling

than you need.  Before you do anything, though, calibrate your temperature
gauge. 
 At the least, put the probe in a can of boiling water and figure out
where 
212* is.
