What I have seen so far and what makes sense to me is to cover the third hole under the prop when flying in cold weather.
First it keeps the Carb warmer and second since the hole is designed to give the oil sump extra cooling, you might achieve your higher oil - temps.
 
Have in mind that the temperature probe in a small Continental is fitted just right after the oil pump, thus giving you the coolest temperature your oil might have in its cycle through the engine. When the oil passes the oil galleys into cam and crankshaft it probably gets a few degrees warmer .
 
With measured oil temps of just slightly under 180 , your oil is still reaching the boil off temp within its working cycle. So no worries there.
 
If someone reads only 140 degrees, it's still not reason to big concern, I would just use 40 weight and change the oil more often.
 
However. Putting some adjustable flaps in front of the air stream in the nose bowl will be problematic, since the pressure is really high there and any flap will just be held open by that pressure.
 
I would not , NOT ! cover the air intakes for the cylinders. These seem too important for the cooling stream to me.

Thinking of oil temperatures this winter, living in Michigan. Is there an adjustable louver available for the opening in the nose bowl above the air intake opening? Any suggestions on closing up some air to keep the oil temp up? If I recall, it seems that my oil temp runs just below 180 deg in cruse with ground temps around 40.  And it takes quite a while for the needle just to move after start up with the same conditions, prior to taxi.  I'm looking forward to some winter flying, as the performance greatly improves.
Any ideas on adjustable louvers or similar?
