Just don't try to claim that it is UL listed, UL (and other safety
testing companies) do not work that way. Understandably, because it is
all about safety and it is easily possible to make an unsafe assembly
out of UL listed parts. But if you do quality work and use common sense
then it is easy to make an (EVSE) assembly as safe as a power cord that
you also are allowed to put together yourself... Heck, an EVSE is little
more than a power cord with some smarts to detect it is connected before
making the plug live.
