That's right. The KISS solution is a 12v accessory battery. Even Tesla is using a 12v lead-acid accessory battery.

Some motorized machines use 24 volts for the starter motor and
lights, so you can find a few lights using 24 volts. And the
communications or phone system used 48 volts I believe so there is
some equipment around at that voltage.

Yes; either of these are reasonable alternative system voltages for low-power devices. If you're building a vehicle from scratch, it's worth considering them as an alternative.

For higher-powered stuff (the traction motor being a prime example), it's worth powering them directly from the pack voltage.
