In a Finale Text Box, which is the context of the original question, 
as others have already pointed out, there are predefined shortcuts 
for sharps, flats and naturals. To see all the "inserts" available to 
you, while typing into a textbox (directly into scroll or page view) 
or in the Text Box Edit dialog, go to the TEXT menu and choose 
INSERTS.

Now, for anything other than sharp, flat, natural, double sharp and 
double flat, you basically have to either futz around with changing 
baselines and line spacing, or you need a font with music characters 
in it that's designed to be used inline with text fonts. 

Also keep in mind that the Engraver Text fonts have lots of useful 
characters in them, and it has proper line height and baseline.
