There is still the question of why there was so much rust in the
radiator of a freshly rebuilt engine. If you had a 50/50 mix in the
cooling system, there shouldn't have been rust even with the engine
sitting for an extended period.
As for oil leaks, you may want to try snugging bolts in the oil and
tranny pans to see if things are just a bit loose before you change
gaskets. Cranking on bolts too hard may just make things worse, but
looking for bolts that just need a little tightening may pay off.

So heres my update:
I replaced the fan clutch and also replaced the original radiator with a
desert cooler. So far no overheating problems. The old clutch was
definetly bad, so replacing the radiator may have been overkill, but its no
harm no foul.
I had a weird problem of the transmission modulator vaccuum line hose
tearing in half - never seen that one before! It explained why the bird
shifting at such hig RPMs and running like crap!
Unfortunately I had not run the car much over the past few years, so now I
have a small transmission and oil leak that have developed - doh!
I havent yet identified the location of the leaks. I did see small oil
drops developing on the bottom of the start when it was sitting still and
running - its just really tough finding those darn leaks!!!
The motor and tranny were rebuilt 4 years ago and have less than 200 miles
on them, so its probably a stupid issue of me not having run the car enough
- I hate to pay the $$$ pull the tranny to have the front seal replaced
(which is probably the problem) and I certainly would hate to replace the
rear main seal if thats whats leaking - I am hopful that driving it will
help relube the seals, but I dont expect much to change....any helpful
advice is always appreciated...
