ffmpeg could work, but I would vote for mp1e since it encodes mpeg1
which can be viewed while recording, and because it's lightweight
enough to use at low (320x240) resolution on a 400mhz machine, or high
resolution (720x576) on a medium end machine (1.0ghz+)

We've also tried it before (Thomas has even written some code which
may still be in CVS) and it works with a simple wrapper.
