I haven't been following closely, so I may be duplicating past ideas (or my ideas may be completely wrong, of course ;)) but it sounds like the tech may have managed to copy the data forks but not the resource forks... If this is the case, you should be able to open most of the documents using the menu (file... open... or something like that) but for the most part, the applications that have gone blank probably need a re-install. If you want some learning-style fun, you can get a copy of ResEdit (free off Apple's ftp site) and look at the resource forks of the files, and look at the file types too. An application should have the file type "APPL" IIRC.
