Well, Amanda, you just answered your own question, you realize ;-) Go to System Preferences > Accounts > Startup Items. Select the items to remove, then click the '-' symbol.
It is different in 10.2, there's a separate Login items pane in System Preferences, and I don't think that trick works.
I did this under 10.3.4 and don't know if there is a different procedure for other versions.--
