The term "god" is a bit lose really especially when you get into fantasy.

For instance, while Torak was a God and Garion a mortal, technically they were both empowered by the dark and light prophecieis respectively at the time, which made it a far more equal fight, and ultimately it came down to whether Torak would give in to despare or Garrion give in to fear.

I've only seen a few fantasy novels where it was possible for a mortal to kill a god, but even then in just about every situation the weapon did have to be one forged either by or with the help of another god. In David Eddings' Belgariad series for instance, Belgarion fought and killed the evil god Torak with the Sword of the Rivan King. Granted the sword itself was forged by a mortal, Belgarion's ancestor Riva Iron-Grip, but it was adorned with an object created by a god, the Orb of Aldur, which had previously injured Torak when he tried to force it to submit to him. The gods could be wounded by mortal weapons but not killed, even if they were stabbed through the head or the heart.

True. I suppose I'd much rather contend with Athena than Apollo. I seem to remember he got into a musical competition with a Satyr, lyre versus flute.
When it looked as though he might lose, Apollo changed the rules so that
they each had to turn their instrument upside down and play and sing at the
same time. Since you obviously can't play a flute upside down and can't
really sing very well while playing it, the outcome was fairly predictable. And I seem to recall Apollo being quite cruel. That might have been partly why he's featured as the second to final boss in one of my favorite RPG's, Final Fantasy Legend II for the Game Boy. And he was actually quite tricky
to beat. Of course technically I suppose you don't really defeat him. He
actually ends up destroying himself by trying to harness too much power.

Well, some might call what Athena does cheating, but others might also
see it as being clever and sneeky. For example, the Trojan Horse, was
her idea, and of course that was the deciding factor in the Trojan
War. It was a sneeky and underhanded trick to get a small force of
armed men inside Troi's deffences, but it worked. Was that cheating or
just being sneeky?
As for Athena's contest with Arachne Athena did in deed use the clouds
to do her weaving which of course caused her to win the contest.
However, As Athena herself told Arachne after she had won the contest
Arachne didn't tell her that she couldn't use the clouds before the
contest started. Again, this could be seen as cheating, but it also
could mean Athena was being sneeky and underhanded because the terms
of the contest never said that she couldn't use the clouds in her
weaving. Sure what she did wasn't fair, but she was only playing by
the rules stipulated before the contest started, and they didn't state
that using the clouds was prohibited.
However, in that particular story we also get to see Athena's
compassion for mortals too. after Arachne lost the contest she tried
to hang herself with a rope. Athena saw this and turned Arachne into a
spider, and made her the master weaver of all the animals. I think
that was meant as a  belated apology and possibly as a gift of sorts.
