Hi Bill,

You're on the right track (no pun intended). Please see the Browser 
Lines section of our custom track help docs: 
http://genome.ucsc.edu/goldenPath/help/customTrack.html#BROWSER

That'll have all the information you need. Specifically, the "hide" and 
"hide all" attributes.
