Geoserver supports SLD also http://geoserver.org/display/GEOSDOC/Google+Maps+SLD
And here is a howto for mapserver. http://mapserver.gis.umn.edu/docs/howto/sldhowto They dont roll your style parameters for you in terms of creating the distribution of styles for your thematic mapping ( logaritmic progression or linear or SD based .. one would have to do compute those and put it in an SLD.) But slds mean yes you can have the data in a pretty normal FREE.... WMS published in multiple styles from a single source based on attributes of the data...
