"Can't we just..." syndrome is particularly nasty when we are talking about 
cultural stuff we don't really know about. 

I'm sure if that was the best option, that's what we would be going with. I'm 
sure the team did their research, probably even (gasp!) talked
to knowledgeable folks who know the situation (like Li Gong), and thought for 
weeks/months about the issue, unlike we who have only had a few days to think 
about it and armchair quarterback the situation. 

My guess is that while poking a firewall hole isn't hard, poking one big enough 
for every Chinese Firefox user is either too much, too costly or too dangerous 
to do. Same with trying to teach every individual Firefox user in China how to 
poke their own firewall holes (to me that feels like we'd be complicit in 
mass-treason. 

Disclaimer: the above is entirely speculation and guesses by me. I have not 
been to China, I have no family in China, just a few friends and I haven't 
asked them about this.
