SIM, não confundir CoS (que é uma marca de pacotes no L2) com DSCP (que tambem é uma marca no pacote), QoS é o que fazer com essas marcas de acordo com certa política. Algo tão específico não pode ser generalizado. "DSCP will be preserved throughout all my examples because IP phones can assign DSCP values and the value is preserved in the IP packet. Doesn't matter that ethernet is used as the transport mechanism as I thought. CoS will be stripped away anytime there is no trunk.
