I think it depends on the school as to the appropriate color if it's not
black.  Rutgers uses red; there's a Scottish one that is red wool; my Yale
blue gown has the bell/balloon sleeves with 3 velvet stripes.  The style of
hat is associeated with school and degree also, I believe.

You're seeing them a lot more.  The Cheap Gowns come with the standard
mortar board -- the Expensive Gowns come with your choice.  (at least on one
of the web sites that I looked at.)
