With my current workhorse currently dead, I'm leaning towards finally
modernizing and picking up the G5. But in my universal uneasiness, (plus
my Macs up to now have all been older machines, so even if I muck up
something seriously, I could always find a replacement part dirt cheap.)
I thought I'd throw out a few questions ot current owners.

Presently I'm looking at the 17" 1.6GHz model with Combo drive.

Your description sounds like a tower. Is it? If so, I'd suggest an iMac G5 rather than this, for reasons I'll explain below.

Have you found the base 256MB RAM sufficient (and the most intensive app
you've been using?) Or should I go and bump it to 512.

256MB in a G5 is criminally underspec'd. Apple really should ship these machines with 512MB and for power users I would suggest 1-2GB of RAM as ideal.

  I know I haven't
said what I plan to use it for, so I'll say whatever apps it comes with
(AppleWorks, Safari, iLife, etc) full force and several of them
simultaneously?

AppleWorks (and maybe iLife, I don't know) don't come on the towers, they are only included in the "consumer" Macs, ie the eMac, the iMac and the iBook.

Installation of upgrades easy? Friend who is an Apple service tech says
it's been made really easy/accessable, but hasn't shown me the internals
of one yet. Things I have in mind presently are RAM and internal
Bluetooth.)

For a tower, upgrades are very easy, particularly the RAM. The iMac G5's upgrades are even easier -- the entire machine is user-serviceable, says Apple.

I am not certain, but I believe that internal Bluetooth MUST be installed by Apple at the time of shipment -- this seems to be particularly true of the iMac. External USB Bluetooth modules, however, are readily available.

Backwards hardware compatability, is it still possible to use my
StyleWriters and Quicktake camera. I know there's USB-Serial adapters,
but will Classic still be able to access them?

Possibly to the Stylewriter (pretty unlikely) and definitely not for the QuickTake. I appreciate stretching the value of components by using them as long as possible, but you are nearly a decade overdue for a real inkjet printer and a real digital camera. You're squeezing those pennies too hard -- they'll asphyxiate! :)
