Daniel's suggestion is the simplest.  When you do the switch, have the 
domains running on the new machine, then remove them (but keep imail 
running) on the old machine.  But then have the old machine forward mail 
(see the Imail docs) that arrives after the switch to the new mail server.

As soon as you see the sysMMDD.txt logs of the old machine being empty of

" ... SMTP rdeliver newmachine.com. ..."

... lines (these indicate msg forwards to the new machine), you can stop 
Imail on the old machine.
