On the % issue, once you configure the sub virtual to send all to smart
host, it will do so.

Example, if you have a sub virtual example.com and IIS receives a e-mail
addressed to [EMAIL PROTECTED], it is not going to
deliver it to remotedomain.com, but rather will send it to the smart host it
is configured to use, that being for example.com. It is then up to the
server at example.com to take action.
