In most cases, peer servers (the IMail "peering" functionality) isn't very useful -- it doesn't help really with the load on the servers. With a large volume of E-mail to process, the best answer is usually adding gateway servers. The gateway servers can scan the mail and then pass it on to the primary IMail server (which should not appear in the MX record; otherwise, spam/viruses can be sent directly to it). An advantage of this is that if you block spam/viruses on the gateway servers, it reduces the amount of E-mail that the primary IMail server has to deal with. It is also possible to set this up with just a single gateway server, which would have a bit less work to do than the primary mailserver (since it doesn't have to deal with POP3, web messaging, etc.), and therefore can handle a slightly larger volume.
