Can
you look and see what processes are using the processor when it is 100%?
Another option to check may be a slow DNS server. Is your DNS
local on the subnet to the Imail box? Is it
overloaded?
Just
some things to check.....

You are not using Windows 2003, correct (IMail had some problems with slow
access to registry entries, but 8.05 fixes that)?
We heard from one IMail user that was having some similar problems, and
switching to using registered RAM seemed to have fixed it. It's a long
shot, but might be worth a try.
