Apparently, it is OK to have 2 listed, but only the first one will be
used. Is their any way to specify a backup DNS server to IMail?

And that appears to have been it. Spool/overflow were over 17,000
each
when I removed the dead server. They've both dropped under 15,000
in
the last 20 minutes.

I just tested that I could get out from the box. Failed to use
nslookup to specify the server.
You hit the nail on the head. Had 2 DNS servers in IMail
Admin -- the
one listed first appears to be failing. Just removed it so
hopefully
IMail can start to catch up now that it doesn't have to do
failed
lookups on the bad server before going over to the good server.
