I intended to quantify it with “most”, rather than “all”. IIANM, XFCE and KDE seem to use Noto Sans by default, and GNOME uses Cantarell (maybe they've switcher to Inter?). Various distributions set their own defaults on some of the DEs: Fedora uses Note, LMDE uses DejaVu sans etc. There's an Ubuntu typeface used on many Ubuntu distributions.
