* When you use Noto Sans as the default font, you shouldn't install the
complete Noto Sans family, but only a subset. For example only a few fonts of
the subset Noto Latin, Greek, Cyrillic.

* Creating a new font is a lot of work and totally unnecessary, because you
already have a modern font with a large coverage of Unicode characters and
glyphs.


* As far as I know Noto Sans is the only real open source contender for a new
modern font with a high coverage of characters and glyphs. There isn't much
choice.
