  I did a bit of search on this topic ( mainly on comp.lang.postscript).
The following is what i found.
  
good news:      There *is* a driver for handling economode on HP deskjets its
called hpdj. ftp://ftp.sbs.de/pub/graphics/ghostscript/pcl3/pcl3.html
This is intended for the hp500 and the 800 sereis but according to the
author works on 610 as well. It also has additional options for
resolution, mediatype etc.

bad news?:      I did gs -h|grep hpdj. It was there, but confusingly
enough the /usr/doc/ghostscript docs say that this is yet to be *fully*
integrated. This appears to be true because

gs -q -dNOPAUSE -sDEVICE=hpdj ....
 spews out lots of error messages.So if you want to use it you have to get
the code and compile it yourself.

        Today morning i had said Jiju's @PJL hack would probably work. But
now i find ( from HP's site) the 610 doesnt understand PJL ( printer job
language). A pity i liked the hack.
        
        I even pointed to RHL printtol's  drivers for HP1000, HP710/720
and 820. All of these talk PPA and not PCL which is understood by HP610.
So even these are out.

       However theres another driver cd670 which has the functionality for
economode. The /usr/docs says that its not been integrated but 

gs -sDEVICE=cdj670 ....does generatsome output. I cant check cos i dont
have that printer. The option to give is 

 -dQuality= ( 0 for normal, 1 for presentation -1 for economy )

There's yet another driver about which the author of hpdj is a bit
contemptuous. Its cdj500. It has options for PrintQuality i.e.
-dPrintQuality( -1 for fast 0:normal 1:presentation)
-dDepletion ( intelligent dot removal 0:normal 1:25%, 2:50% )

  So you can try out these 2 drivers rightaway ( you have to modify the
filter which is being called from your printcap). If these dont work out
hpdj is always there.
