Do you want delta (your exim box) as your primary MX, to receive mails?

yes. all you have to do is to add the dns entries for delta on your dns
server and restart named on it

if you give alpha a higher preference number, it's like setting up alpha as a
backup MX for your domain - if delta is down or not reachable, mail will go
to alpha ... then will be delivered to delta when it comes up

if you set delta as your primary mx then you have to migrate the users as
well ... so test it on your lan, see if it receives mail, etc. then migrate
your users.
