Dan, You can just plug your Airport Extreme into the Uverse router with an ethernet cable and use it like a Wireless Access Point. I would also see if AT&T will turn OFF the wireless in their modem/router/box.
When you set up the AEBS, follow the prompts to set it up manually and look for where it gives you the option to set it into "Bridge Mode." That is the setting that turns off the NAT and DHCP so it's not a "router" anymore but simply a wireless access point. If you can't get AT&T to turn off their radio, then at least make sure your AEBS is on a different channel. Check it with the Airport menu on your laptop. (Hold down the option key to view additional information when selecting the Airport menu.) j.
