I have had this experience. You've got the right idea, use an "easyout". I
found my broken bolt was actually loose in the hole when I started to drill
into it and cant work out why it broke. I reversed the drill and it
unscrewed easily.

where the engine mounts bolt into has half a screw in there but the head has
snapped off. It is too far in to grip, so i was going to try to drill a hole
in the screw and reverse thread it to get it out but i thought i'd ask if
anyone had any good tricks for getting them out first. Any suggestions?
