Re:  8GB vs. 16GB when running VMWare - definitely makes a huge
difference.  It'd be silly to not order the extra 8GB on a new machine
in the environment you're planning to run.  Note that you need to run
Win7 64bit to expand the VM's memory usage beyond 3GB.

Also, you don't have to have the newest MBP to use 16GB of RAM.  I'm
currently running the latest generation MBP (before the new retina
display one) with 16GB just fine.  While the setup isn't *officially*
supported by Apple it does work with no problems.
