Cottage Cheese Pie
4 eggs
3/4 c. sugar
1/4 tsp. salt
1/4 c. raisins (optional)
1 lb. carton cottage cheese
1 tsp. lemon extract
1 tsp. vanilla
Nutmeg
Mix well in order listed. Put in unbaked pie shell. Sprinkle with
nutmeg. Bake at 350 degrees for 1 hour. If cottage cheese is dry, add
1/2 cup milk.
Pineapple Cottage Cheese Jello Salad
1 small pkg. lime gelatin
1 c. boiling water
1 c. evaporated milk
1 c. cottage cheese
1 sm. can crushed pineapple
1/2 c. mayonnaise
1/4 c. chopped celery
1/4 c. chopped nuts
Dissolve gelatin in hot water, add other ingredients. Pour into mold
and chill.
