There are so many to choose from and so many great ideas. The last three days have been exceptional. Thank you. Linda in NM Sharon's Hominy Casserole with Fritos Serving Size : 6 2 (15.5 oz) cans hominy, (1 white and 1 yellow) drained 1/2 pound Velveeta cheese, cubed 1 can Cream of Mushroom soup 1 can Ro*Tel tomatoes and green chilies, DO NOT DRAIN 1 cup crushed Fritos, or crushed tortilla chips Drain hominy well and put into buttered 2 quart casserole dish. In a pan, combine cubed Velveeta cheese, Cream of Mushroom soup, and Ro*Tel tomatoes and green chilies. Let heat through until cheese is somewhat melted. Pour over top of the hominy. Sprinkle crushed Fritos® corn chips over the top. Bake at 350ºF. for 35 minutes. NOTE: I like to use a combination of white and yellow hominy for color, but that is only a personal preference. You can taste for seasoning adjustment, but you probably don't need to add any extra salt or pepper. Also you could use canned stewed tomatoes in place of the Ro*Tel tomatoes and green chilies. And I guess if you just hate Velveeta® cheese you could substitute mild cheddar cheese. Claudine ===== Strawberry Cream Pie 1 cup sugar 6 tablespoons cornstarch 1/2 teaspoon salt 21/2 cups scalded milk 2 slightly beaten eggs 3 tablespoons butter 1/2 teaspoon vanilla extract 1 - 9 inch baked pastry shell 1 pint strawberries sliced 1 cup heavy cream whipped mix sugar, cornstarch, and salt; gradually add milk and cook in double boiler until thick. Add small amount of hot mixture to eggs; stir into remaining hot mixture.. Cook until thick, stirring constantly. Remove from heat; add butter and vanilla. Chill. Then pour into cooled baked shell. Then add the strawberries. Chill. Spread the whipped cream on top , for garnish add halved berries on top of cream serve.
