The nice thing about wearing a smile is that one size fits everybody.

Please get any recipes you want off the past newsletters in the next 
three weeks.  It is probable I will be deleting all of the 2004 newsletters and 
the 2005 newsletters through August when I get back 
from Arizona on Sept 21st.

Susie's Mini Cheesecakes 
24 vanilla wafers
2, 8oz., pkgs. cream cheese, softened
2/3 to 1 cup sugar
2 eggs
1 teaspoon vanilla
1 can cherry, blueberry or anyothers that would work with the colors, 
optional
1/3 to 2/3 cup chopped nuts, optional

Line cupcake pans with liners. Place a vanilla wafer in the bottom of 
each liner. Beat cream cheese, sugar eggs and vanilla until fluffy. 
Fill 

each liners 2/3 full with mixture. bake at 375ºF for 15 to 20 
minutes. Top each with spoonful of pie filling and nuts, if using. 
Chill.

7 Layer Cookies
1 stick butter
1 cup graham cracker crumbs
1 cup chocolate chips
1 cup butterscotch chips
1 cup shredded coconut
1 cup chopped nuts
1 can sweetened condensed milk

Preheat oven to 350°. Melt butter in 13 x 10-inch pan. Cool slightly. 
Sprinkle cracker crumbs over butter. Sprinkle chocolate chips, 

butterscotch chips, coconut, chopped nuts and milk in order over the 
crumbs. Bake 25 minutes. Cool. Cut into squares. Yield: 4 dozen.
