My two cents; ign switch. Known to fail. Remove and clean switch base contacts.
Nothing to lose by trying. Everything else is new (?)

This sounds a lot like what happened to me on my 83 650

Check the fuse again... mine broke without visually showing that it
was broken. It never burned out, but it sheared perfectly in a line
with the right-hand side clamp. It would start just fine, run just
fine, and then after I turned off the key, sometimes it would simply
not do anything.

I found that pressing the wires on the fuse box would bring it back,
but what that was really doing was reconnecting this hairline
fracture. Then it would run again, just fine, until I stalled out or
turned the key, and then... dead bike
