I agree that this project would have some value if WotC is not interested in the "old" d&d creatures anymore. Finding people who would donate their time would be very difficult - those who are most interested would already have been contaminated by the WotC material, but it is definitely doable, especially if you get creative when looking for sources. I might be willing to give it a try.
