To install X you need a control panel application called XPostFacto.  
You can find it in the OS X section on OWC's site.

The app works well, but you must leave 9.1 on your computer in case you 
have problems.  9.2 doesn't work well on old world machines.  It takes 
alot of patching and editing.  Use XPostFacto to prep the disk for 
install and then to boot to the OS X cd.  Next just go through the 
normal installation procedures from the OS X disk.  Reboot and you 
should be in OS X.  If not or you wind up back at 9.1, use the 
XPostFacto to reboot into OS X.  You can't use the startup disk control 
panel to boot to X, but you can got from X to 9.1 using it.

As a side note I'm quite happy with the performance of OS X on my 7500 
G4/450 Powerforce upgrade with 512 ram.  I just hope they hurry up and 
make a patch or upgrade for my 32 meg ATI 7000 Radeon.  This 2 megs of 
onboard video ram is killing me!
