I have installed Mac OS X [client and server 10.2] on RAIDs, they install fine but they do not boot.
I have also checked with Disk Utility and it says all is fine. I have also used Disk Warrior on the boot drive and on the RAID.

Liar... no offense. But my Mac and I are living proof it can be done! I have OS X 10.2.*8*? Well, its 10.2 at least. I set up a RAID with the Mac OEM drive (30GB aprox) and another 30GB Seagate (PC) IDE drives when i was installing X. I just simply went over to RAID and followed directions. I DO NOT HAVE SERVER. On this machine.
As for the RAID problem, I would open disk util and make sure it says that they are a-ok. Go over to RAID tab and make sure it says fully functional. Then maybe some disk utilities, fix permissions? Just guessing here. I'm sure you've done all that already.
